Disponer 6 colas de los cangrejos entre dos l\u00e1minas de papel film, separando la parte carnosa de la cola del cangrejo hasta conseguir una l\u00e1mina delgada. Reservar en el congelador. Confitar las cabezas en aceite de oliva (75 cl.) y dejar enfriar el resultado. Limpiar la granada y reservar los granos. Con el resto del aceite y los frutos secos picados, limpiar y centrifugar los micro brotes de ajo.<\/p>\n<\/div><div class=\"fusion-clearfix\"><\/div><\/div><\/div><div class=\"fusion-layout-column fusion_builder_column fusion-builder-column-3 fusion_builder_column_1_1 1_1 fusion-one-full fusion-column-first fusion-column-last\" style=\"--awb-bg-size:cover;\"><div class=\"fusion-column-wrapper fusion-flex-column-wrapper-legacy\"><div class=\"fusion-title title fusion-title-3 fusion-title-text fusion-title-size-one\"><h1 class=\"fusion-title-heading title-heading-left\" style=\"margin:0;\"><strong>Presentaci\u00f3n:<\/strong><\/h1><span class=\"awb-title-spacer\"><\/span><div class=\"title-sep-container\"><div class=\"title-sep sep-double sep-solid\" style=\"border-color:#e0dede;\"><\/div><\/div><\/div><div class=\"fusion-text fusion-text-3\"><p>Sobre un plato de roca, disponer el Carpaccio de cangrejo separ\u00e1ndolo de las l\u00e1minas de papel film. Dejar que se atempere durante dos minutos para su total descongelaci\u00f3n. Una vez dispuesto en el plato, procederemos al aderezado del Carpaccio dibujando unas l\u00edneas del mismo.. A continuaci\u00f3n, regaremos con el Aceite de Oliva Virgen Extra Ecol\u00f3gico y vinagre frutos rojos Hostalets, sal y mixto\u00a0 de pimenta, decoramos conlas diferentes huevas y as\u00ed como los micro brotes y los granos de granada, frutos secos variados.
