En un cazo se echa la leche, la canela y la corteza de lim\u00f3n. Aparte, se baten los huevos junto al az\u00facar y el aceite donde antes fre\u00edmos la matalah\u00fava. Incorporamos a la mezcla la leche ya aromatizada y volcamos todo ello en unos moldes de flanes, con caramelo en el fondo, que previamente habremos preparado con los 150 gr. de az\u00facar. Calentar la\u00a0 leche\u00a0 y agregar el batido anterior. Sin dejar de remover, esperar que espese y haya cocido de forma que no se corte y las yemas\u00a0 queden perfectamente higienizadas. Una vez que tenemos la crema ya hecha, retirar del fuego y dejar enfriar. Batir con el\u00a0 Aceite de Oliva Virgen Extra, ECOL\u00d3GICO ARBEQUINA, verti\u00e9ndolo\u00a0 a hilo fino y, cuando est\u00e9 perfectamente incorporado, poner en una heladora o en un recipiente. En este caso lo pondremos a enfriar y, cuando est\u00e9 a medio helar, lo batimos para romper los cristales y lo devolvemos al congelador.
