Dans une casserole verser le lait, la cannelle et le zest de citron. Dans la po\u00eale qui a servi \u00e0 griller l\u2019anis, battre les \u0153ufs, le sucre et l\u2019huile. Incorporer au m\u00e9lange le lait aromatis\u00e9 puis verser le tout dans des moules \u00e0 flans, au fond desquels pr\u00e9alablement aura \u00e9t\u00e9 vers\u00e9 le caramel pr\u00e9par\u00e9 avec environ 150 g. de sucre. Sans arr\u00eater de remuer, attendre que le m\u00e9lange s\u2019\u00e9paississe et qu\u2019il prenne sans retomber de mani\u00e8re \u00e0 ce que les jaunes s\u2019y int\u00e8grent parfaitement. Une fois que la cr\u00e8me est pr\u00eate, retirer du feu et laisser refroidir. Battre avec l\u2019huile d\u2019olive extra vierge arbequina bio FH1898 en versant un fin filet et une fois bien incorpor\u00e9e, verser dans un r\u00e9cipient avant de le mettre au cong\u00e9lateur. Retirer le m\u00e9lange avant qu\u2019il ne soit compl\u00e8tement congel\u00e9 et le battre pour rompre les cristaux avant de le replacer au cong\u00e9lateur.
